After working for more than a decade in professional test kitchens across the U.S., Iโve learned one thing:
A recipe isnโt finished when it tastes goodโitโs finished when it makes sense for real people at home.
My job isnโt just to create food.
Itโs to create food that works.
My Story
I grew up in a Mexican-American household in Southern California where food was the heartbeat of every celebration. There was always something simmering, grilling, or baking. My grandmother made tortillas by hand every morning, and Iโd watch her roll, press, flip, and smile while humming old ranchera songs.
Even as a kid, I was fascinated by the why behind food.
Why did her beans taste better after resting overnight?
Why did seasoning change depending on who she cooked for?
Why did recipes never taste exactly the same twice?
That curiosity led me straight to culinary school at the Culinary Institute of America, where I spent my early twenties buried in technique, kitchen science, and long shifts. Then came the test kitchensโwhere real learning began.
The Turning Point
My moment of clarity hit during a recipe test at AllRecipes. I was working on a simple one-pot chicken dish. Nothing fancy. But after ten tests, it still wasnโt right.
Then I watched a home cook try it in her own kitchenโand suddenly everything clicked. She didnโt have fancy pots. She didnโt have imported spices. She didnโt measure to the gram.
She cooked like a real person.
With instinct. With substitutions. With kids running around her legs.
And the recipe failed herโnot because she did it wrong, but because we hadnโt made it realistic enough.
That moment changed my entire career.
I shifted from โchef perfectionโ to โhome cook practicality.โ
From technical cuisine to accessible comfort food.
From complexity to clarity.
What I Learned the Hard Way
You can develop the most brilliant recipeโbut if it doesnโt work on a busy Tuesday night, it doesnโt matter.
Iโve had my share of failures:

โ Marinades that worked in the test kitchen but fell flat in home kitchens
โ Bake times that changed depending on the humidity
โ Fried chicken that turned soggy after cooling
But every failure taught me something essential:
Food behaves differently for everyoneโand a good developer anticipates that.
The hardest lesson?
Letting go of ego and learning to cook for people, not for chefs.
