Portland-based recipe developer who believes that great cooking starts with curiosity, patience, and a willingness to make a beautiful mess in the kitchen.

Hey There! Iโ€™m Michael Reyes

Iโ€™m the guy behind the flavorsโ€”the one who tests, tweaks, adjusts, burns, rebuilds, and perfects each recipe until it feels like something youโ€™ll want to make again and again.

After working for more than a decade in professional test kitchens across the U.S., Iโ€™ve learned one thing:
A recipe isnโ€™t finished when it tastes goodโ€”itโ€™s finished when it makes sense for real people at home.

My job isnโ€™t just to create food.
Itโ€™s to create food that works.

My Story

I grew up in a Mexican-American household in Southern California where food was the heartbeat of every celebration. There was always something simmering, grilling, or baking. My grandmother made tortillas by hand every morning, and Iโ€™d watch her roll, press, flip, and smile while humming old ranchera songs.

Even as a kid, I was fascinated by the why behind food.
Why did her beans taste better after resting overnight?
Why did seasoning change depending on who she cooked for?
Why did recipes never taste exactly the same twice?

That curiosity led me straight to culinary school at the Culinary Institute of America, where I spent my early twenties buried in technique, kitchen science, and long shifts. Then came the test kitchensโ€”where real learning began.

The Turning Point

My moment of clarity hit during a recipe test at AllRecipes. I was working on a simple one-pot chicken dish. Nothing fancy. But after ten tests, it still wasnโ€™t right.

Then I watched a home cook try it in her own kitchenโ€”and suddenly everything clicked. She didnโ€™t have fancy pots. She didnโ€™t have imported spices. She didnโ€™t measure to the gram.

She cooked like a real person.
With instinct. With substitutions. With kids running around her legs.

And the recipe failed herโ€”not because she did it wrong, but because we hadnโ€™t made it realistic enough.

That moment changed my entire career.

I shifted from โ€œchef perfectionโ€ to โ€œhome cook practicality.โ€
From technical cuisine to accessible comfort food.
From complexity to clarity.

What I Learned the Hard Way

You can develop the most brilliant recipeโ€”but if it doesnโ€™t work on a busy Tuesday night, it doesnโ€™t matter.

Iโ€™ve had my share of failures:

โŒ Sauces too thick on the 7th reheating
โŒ Marinades that worked in the test kitchen but fell flat in home kitchens
โŒ Bake times that changed depending on the humidity
โŒ Fried chicken that turned soggy after cooling

But every failure taught me something essential:

Food behaves differently for everyoneโ€”and a good developer anticipates that.

The hardest lesson?
Letting go of ego and learning to cook for people, not for chefs.

My Approach Now

Today I build recipes with a philosophy grounded in:

โœ” Everyday ingredients
โœ” Clear, reliable steps
โœ” Realistic timing
โœ” Flexible methods
โœ” Cozy, comforting flavors

I write recipes so your audience feels confidentโ€”not overwhelmed.

If someone ends the meal thinking, โ€œWow, I made that!โ€ โ€” then I’ve done my job.

What I Believe

โœจ A recipe should feel like a friend guiding youโ€”not a chef judging you.
โœจ Comfort food can be simple AND elevated.
โœจ Technique matters, but joy matters more.
โœจ Cooking is a skill, not a talentโ€”and everyone can learn it.
โœจ A kitchen filled with laughter tastes better.
