A quick and easy Italian pasta dish made with eggs, cheese, crispy pancetta, and black pepper.
Ingredients
Pasta and Sauce Ingredients
- 400 grams spaghetti Use regular or whole wheat spaghetti
- 150 grams pancetta Cut into small cubes
- 2 large eggs Room temperature works best
- 100 grams Parmesan cheese Freshly grated for best flavor
- 1 teaspoon black pepper Freshly cracked for best flavor
Instructions
Cooking the Pasta
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- Reserve about 1 cup of pasta water before draining.
Preparing the Sauce
- In a skillet, cook the pancetta over medium heat until crispy, about 3-5 minutes.
- In a bowl, whisk together the eggs, Parmesan cheese, and black pepper.
Combining All Ingredients
- Add the drained spaghetti to the skillet with pancetta, removing the skillet from heat.
- Quickly pour the egg mixture over the pasta, stirring constantly to prevent the eggs from scrambling.
- Add reserved pasta water as needed to create a creamy sauce.
Notes
Serve immediately with extra Parmesan cheese and cracked black pepper. Can be topped with chopped parsley for freshness.
