Ingredients
  

Pasta and Sauce Ingredients

  • 400 grams spaghetti Use regular or whole wheat spaghetti
  • 150 grams pancetta Cut into small cubes
  • 2 large eggs Room temperature works best
  • 100 grams Parmesan cheese Freshly grated for best flavor
  • 1 teaspoon black pepper Freshly cracked for best flavor

Instructions
 

Cooking the Pasta

  • Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  • Reserve about 1 cup of pasta water before draining.

Preparing the Sauce

  • In a skillet, cook the pancetta over medium heat until crispy, about 3-5 minutes.
  • In a bowl, whisk together the eggs, Parmesan cheese, and black pepper.

Combining All Ingredients

  • Add the drained spaghetti to the skillet with pancetta, removing the skillet from heat.
  • Quickly pour the egg mixture over the pasta, stirring constantly to prevent the eggs from scrambling.
  • Add reserved pasta water as needed to create a creamy sauce.

Notes

Serve immediately with extra Parmesan cheese and cracked black pepper. Can be topped with chopped parsley for freshness.
